I'm back!

Well was that a hiatus or what??

UPDATE:

I started my new job! LOVE. It's totally awesome. I have an OFFICE. I share it with another woman who started at the school this year as well. Our office is huge and has some desks in it so we can teach in it as well. It's Sp.Ed. 7th & 8th grade. I go into the classrooms for the kids on my team and help them out in class, and I will have some pull-out as well. I started a week ago and I absolutely love it. I had the New Teacher Academy a week before that and then testing training a week before that. So i've been at work for 3 weeks now! It's Labor Day weekend though - a 4 DAY WEEKEND! Almost unheard of in all of it's wonderous glory. Bliss. I REALLY can't wait to get paid though! Basically first check since school got out in June! Gosh do we need the money!

I got a new car! Yay! And it's like $25 cheaper a month! 2012 Chevy Cruz. It's red - I call it the Red Devil. It's so sweet... automatic everything, Onstar, Sirius radio, the works. I'm in l<3ve!

And...

We're having a baby! Ta-da!! We found out recently and I told my new job last week. I was nervous how that would go down because this is my first year at the job and I will have to take maternity leave - but thing should work out great! I will be on leave (hopefully) from the birth through til summer.. Then I will start again teaching in September... Very excited!

I can't decide if I want a girl or boy... not like I have much of a choice! I know The Hubs wants a boy but I think either will be cool! I went for my first appt. on friday and saw the baby and heard the heartbeat! I snuck one in because I feel HUGE for 9 weeks and though it might be twins. U/S only showed one baby but I still think there's another one in there.... Maybe hiding behind the first one!

Very mild symptoms - makes me a little nervous... No morning sickness... Cravings? Oh yeah. Mostly healthy stuff! Cabbage and cooked veggies... I craved soup and made some of that... nothing very strong though! I am exhausted though. Completely. Every day I either nap or go to bed at 9 p.m... even when The Hubs had the night off! Just so exhausted. And i'm hungry allll the time. I'll get full and hungry like 1-2 hours later. Like HUNGRY. Like... FEED ME (said in a scary deep voice). It's quite funny. And most of the time i'm just too tired to make something! We've bought a ton of snacks... Unfortunately when I get really hungry and my stomach is empty it is the only time I will feel sick... Just a little nauseous. Then I eat and i'm fine. I pretty much think for a few min what I really feel like eating and choose that. I can't really plan meals like I used to... One night I cooked for The Hubs and by the time I was done and sat down to eat I was totally turned off by it... kinda weird.

Anyways - we went to a BBQ today with Eric's work buddies & wives and it's oh so obvious that i'm preggo so that was a fun celebration! Then I came home and texted all our friends & fam and then put the message out on fb. I know it's a little early to tell everyone and yes i'm nervous but i'm quite positive. The heartbeat was very strong - 172 bpm @ 8 weeks 5 days! Awesome. I am 9 weeks today... Here's love wishes for our little one!

The Furbabies.

I have two furbabies. Beans, the kitty, and Lucy, the pup. When we moved into our first apartment in 2009 we couldn't have a dog because the landlord didn't allow them... so we decided to get the closest thing we could, a Bengal cat. Full name Beans Peanut Walker... because he was so tiny... as you can see below. Not many people know about the breed Bengal, they're fantastic. They're bred from the wild Asian Leopard Cat. They have personalities like dogs. You can read about them here. They're fantastic. I know, I know, we should have saved a cat and adopted one from a shelter but we lived in a small apartment and the hubs (then bf) and I did not want to deal with the cat hair we dealt with at my parents house. They have two cats of whom I adopted from shelters (so I did my part of saving animals so far!). So we found a breeder that would give us a kitty at half price because he matched the low price of another breeder... and his kitties were ready sooner and then we got...

Bengals love small places. And we love beer!


Now Beans is kind of an a-hole. He'll steal elastics and things and hide them on you or give them to the dog so she'll get caught with them and get in trouble. Once he knocked a pen onto the floor, knowing Lucy would eat it and then we had exploded ink all over the floor and couches that the hubs had to spend hours upon hours cleaning. Beans will fart and crop-dust you as he runs by. And you can bet on the fact that if he was just in the litter box, he'll climb on one of us within 3 minutes. He's a little shit and me and the Hubs agree we should have named him devious like Rickie instead of something cute and sweet like Beans. He does have another side to him though. He'll throw himself against you and follow you from room to room jumping on things that are closest to you just so you will pet him (even when his food bowl is full!) His favorite spot is Eric's crotch and he will lay there for hours. He will lay on my legs until I move. He also loves warm spots... if I get up he'll lay down right where I got up and act as a seat warmer until I get back and kick him out of my spot. And he just farted next to my face. His time to shine is officially over.

Then there's Lucy. Oh, Lucygirl. Full name Lucy Diamond Walker. We loved the name Lucy and we had a thing for the Beatles at the time and she had a diamond on her tail so we named her after "Lucy in the sky with diamonds..." We adopted her from a shelter in NH but she actually came from the mid-US. She was found on the side of the highway with her brother running around and someone scooped them up and saved them. She's the sweetest thing in the world. Would never hurt a fly and I love her more than the world can contain. She will sit there and let you pet her even if she wants to be chasing the cat, she's just so polite... and when you stop petting she'll lick you and then take off like the wind. She'll walk by me while i'm on the couch and lick my toe once and keep walking. Like a drive-by licking. She loves to wrestle with the Hubs and the Hubs used to be her favorite but I think i've finally trumped him for that. Hubs is her Master but I am her Mommy and she loves me. Sometimes I think she thinks i'm her baby though because wherever I go she follows me. She could be dead asleep and i'll go to the bathroom and she'll get up and go peek in the bathroom while i'm peeing... just to make sure that's where I am like "alright, you're safe... i'll go lay back down now". She loves My life has been blessed with her and I love her more than life itself. Here are a few of my favorite pictures of Lucygirl.

Now the blog is being silly so I guess I have to write from the middle... So even though I have a cat and a dog... they do actually get along.. sometimes. They love to play together. They wrestle just like any brother and sister would do. Lucy is EXTREMELY jealous. You can't pet Beans without her whining about it. She's actually so jealous that once I was laying on one couch with her, and the Hubs was laying by himself on another couch and Beans went to lay in his favorite "spot" on his crotch... and Lucy got up, kicked him off, and came and layed back down with me. She didn't want to lay with Hubs, but she didn't want Beans to lay with him either. Yikes.

Mini tacos! Crafts! Nails! And Update!

OMG SO MUCH HAS HAPPENED!!!

I GOT A JOB!!! I actually got 2 JOBS!! I  got called for a long-term sub position in a very snooty rich prosperous town. I was so excited when I found out i'd be making $291... A DAY! What?!?! Considering I only made like $450 a WEEK, I was thrilled. But it was only for 12  weeks so I was a little wary. When the teacher returned from maternity leave then I would be a day-to-day sub... $70 a day. BUT... I did the math and I would make MORE in the 12 weeks I was working as a sub... than I would the WHOLE YEAR as a para. SCORE! So the $70 a day for the rest of the year would just be extra... and I wasn't sure if the $291 was before or after taxes. Whatever... so I went on with my last days of school knowing I had a new job... but didn't want to tell anyone incase it fell through... I didn't want my boss to give my position away then have nothing. So I had a dirty little secret. A wonderful, dirty secret. Anyways... the Monday after school got out I got a call... FROM THE DREAM JOB I INTERVIEWED FOR 3 TIMES AND DIDN'T GET!!!! Since I was top 3, as mentioned here, well, one of the chosen ones turned down the position!! I was next up!!! I am SO excited!! I believe I will be paid less but it is a PERMANENT position in a MIDDLE school in MY school district... so I will be able to keep my retirement and sick days... (which is great but I wouldn't have used so many at the end of the year if I knew I would get to keep them :o) My thought was hey, i'm gonna lose 'em, might as well use 'em!). I still went that day to the first job just incase and I met the students for the one I wasn't taking and they're SO cute oh jeez... It seems like a good place! I am going to call them and leave a message telling them I won't be able to take it. Should probably do it Monday after they get out so 1. I can say I got it that day and 2. Not have to talk to anyone. Confrontation and conflict is not my strong suit. Anyways... long story short. I GOT MY DREAM JOB!!! And it's 15 min closer to my house :o)

Here is my Calendar I made! Idea from Pinterest on this blog... not sure where.


I used a 16x20 Frame (on clearance! $15!) and paint samples... 6 colors... 7 each. I cut them into.... not quite sure... 2.25 x2?? I know it's 2... and it's either 2.5 or 2.25... Anyways. I used double-sided tape to secure it to the board... didn't measure them out or anything I just measured the middle, put one there, then spaced them all out, leaving room on the top for the month. Dry erase, then wipe!

Mini Tacos!!!

I saw the link, again, on Pinterest... but it wasn't working so I just made my own from the picture.

INGREDIENTS:
  •  12 Wonton Wrappers (I only had 7) (Shortage due to the Mozzarella sticks I made for my graduation party last weekend! They were UNBELIEVABLE!)
  • 1 lb. ground beef (or chicken or turkey)
  • Old El Paso less sodium taco seasoning... or this homemade seasoning!
  • 1 fresh chopped tomato
  • 1/2 choped onion
  • Medium can of sliced black olives
  • Shredded Cheddar
  • Shredded asiago (optional)
  • Guacamole - optional... I prefer Wholly Guacamole (esp. the individual 100 cal. packets!)
  • Pam
  • Cupcake/muffin pan
Umm... I think that's it...

Directions:
  1. Preheat the oven to 350*
  2. Cook ground meat in a frying pan.
  3. While cooking, spray cupcake pan with pam, put in wonton wrappers.
  4. Use the taco seasoning in the meat.
  5. Throw in chopped tomato and chopped onion into the frying pan... mix.
  6. Spoon mixture into the wonton wrappers.
  7. Sprinkle chopped onions.
  8. Sprinle shredded cheddar.
  9. Sprinkle asiago.
  10. Bake 7 minutes, check.
  11. If they're done, bueno! If not - 3 more minutes.
  12. Top with guac!

3 Cheese Mexican Mac & Cheese Recipe! Bazinga!

I. Am. A. Culinary. Genius. I was set to make Southwestern Stuffed Peppers... buuuut i've been so into relaxing... and laziness.... and spending hourrrrs on my swing. Annnnd watching Big Bang Theory <3 Sooo I didn't feel like trying a new recipe, reading, paying attention, and all cooking entails. I figured i'd make... mac & cheese sans buffalo chicken that I made for The Hubs last week. Easy enough... thennnnn the juices started flowing... and I made my FIRST EVER original recipe - Mexican Mac & Cheese.

Mexican Mac & Cheese:
16 oz. pasta (elbows - but I didn't have enough of one so I used a medly of 1/2 empty boxes)
1 cup milk
1 tbsp butter
1 tbsp cornstarch
1 cup+ sharp shredded cheddar cheese
1 lb. ground beef (or chicken or turkey if you wanted)
2 tomatoes
1 yellow onion
1 packet of taco seasoning - I use the less-sodium one (or homemade)
1 can black olives (I used sliced - the bigger can? It's in the recycling now so i'm not sure what oz.)
Couple tablespoons of grated parmesan
Handful of shredded mozzarella

Again, not the smoothest chef... so if you find a better method to get all the things done then be my guest! Not sure what size pan either - I think mine is like 8-9" square... but it's wicked deep...

  1. Turn oven on to 350*
  2. Boil the pasta to al dente. I always use the smallest suggested number and set the timer after I put the pasta in the boiling water and stir it (hence - cook time is 9-11, use 9!)
  3. Pam-up a skillet. Brown the beef - all the way through. Do the taco seasoning directions.
  4. Dice tomatoes
  5. Dice onions
  6. Throw the pasta, taco beef, tomatoes, onions, parmesan cheese, and olives into a casserole dish. Mix.
  7. Cheese sauce: Stir 1 cup milk and cornstarch in a small pot. Turn onto mediumish/maybe a little lower heat. Put in butter and stir until it melts. Throw in shredded cheese - stir until it's melted. Cheese sauce!
  8. Pour cheese sauce over mexican pasta goodness, stir.
  9. Sprinkle with mozzarella cheese.
  10. Bake, uncovered, for 15 minutes!
  11. ENJOY!

OMG it is sooooooooooooooooo good!! I LOVED it! Can't wait for The Hubs to try it!!

Ahh. Life.

Sitting on my couch, eating Tiramisu, watching The Bachelorette. Mmm do I love me some trash TV! I had a wonderful week. I had my 4th interview for a teaching job in a middle school... it's my top choice! The interview team loved me (I think). I feel really good about it... especially since there's 2 positions open there! Nice. I have 2 more interviews this week - wed & thurs. I hope I hear from the first school before the interviews so I don't have to go and worry about them! My school's prom is Tuesday - so I will be going to that for a while... holy crap that is tomorrow! And it will be raining - I don't think i'm going to go actually... Boy these Bachelor guys are cute! Anyways. Wed, Thurs, interview... and friday is The Hubs' day off! We're going to make calzones!

We painted our living room green! It's beautiful. We chose asparagus. The bay window curtain rod was coming out of the wall so, after much discussion, that I won, he decided to raise it an inch in new holes. Well, he spackled the old holes and since it will be nearly impossible to match the color we said... hey why don't we paint? He had to go to Home Depot so I figured i'd go with him and grab some paint samples. Bing, bang, boom, asparagus living room. Here are some before and afters:

I LOVE it!! The Hubs likes it too. I made all the pillow covers and curtains on my own. I am so proud of myself! I will post better pictures of those today and possibly a how-to on the pillow cases!! Hmm that would be a good idea.

OMG The Bachelor is great!! She brought in a bunch of kids and stuck the guys in with them. Hehe. So funny.

Anyways. Yes, The Hubs prepped the walls this past week and did the trim as well, then we painted all day sat. It was fun! Looks great. Then Sat night we went out to a bar for a going-away party for a guy The Hubs works with. It was sad to see him and his (preggo) wife go. I love them! He is The Hubs closest friend. I made some more friends and did more bonding with The Wives Club. I had a BLAST. <3 those guys.

OMG so there's only... 16 days left of school! Can't wait! Then it's like... 2 weeks off! CAN'T WAIT. Then summer school starts - not sure of the date. Summer school is awesome because its from like 8-12... which is great because i'm home before I probably would have woken up anyways. 10 o'clock bedtime still sucks and stresses me out but it's okay because I have all of August off! AND THEN DISNEY!!! WAHOOO!! Wow. Life is great. I'm so happy right now.

My new favorite thing is napping outside. Used to be on our lounge chair... Today, it was on the swing... which is my new favorite place in the world (used to be the couch!). I napped for 2 hrs after The Hubs left - I don't know what it is... I bring out a few pillows and a blanket (no matter how hot it is I always need a blanket)... the birds... the warm sun... It's awesome. Lucy plays in the yard and lays under the swing. Sigh - I love it. If it's nice out - I spend a minimum of 2 hrs on our swing. It was a weddings present from our bridal party along with a fire pit <3.

THE most delicious/different salad recipe you will ever have!

Stayed home from work today because of the sore throat. It hurrrttss :o( It was odd because I got it yesterday during the day - which is weird because in the beginning of a sore throat it usually only hurts in the morning.... Hmm.

RECIPE: ORANGE-ONION SALAD!

I know this sounds REALLY gross - but let me tell you. I am THE most pickiest/most skeptical person in the world when it comes to food. My dearest Mother MADE me try this and it is THE most DELICIOUS thing in the world! Salty! Sweet! Citrus! You can't go wrong! And it's all healthy :o)

2 oranges
1/2 onion (red is best - but I usually use yellow)
Olive oil
Salt
Pepper

  1. Peel your orange. I roll it on a hard surface first... til you feel it become loose inside. Makes it so easy to peel AND it makes it nice and juicy!
  2. Cut ur orange into rings - then in half possibly, depending on how you want your pieces to be.
  3. Cut-up your onion into rings, then in 1/2. I use about 3 ring-slices.
  4. Mix it together on a plate (or bowl I guess).
  5. Drizzle olive oil on it so it is lightly coated.
  6. Sprinkle salt & pepper.
  7. Mix.
  8. Enjoy!

Recipe! CROCKPOT FRENCH ONION SOUP! & More

Well, I am officially done my Master's!!! I will be graduating June 3. I am very very excited and it feels liberating to be able to do nothing all day and also realizing I will have a more relaxing life without homework and a portfolio hanging over my head! I also have a lot of great elements from my teaching portfolio to be able to put into my interview portfolio - which is great!! OH SO GLAD TO BE DONE!!!

Maybe now I can make all those neat things on I keep finding on Pinterest.

After I got out of class The Hubs picked me up and we went to our friend's house for another friend's Cinco de Mayo birthday party. It was a blast. I LOVE my college friends. They're actually The Hubs' college friends but after spending their whole senior year with them they welcomed me to the crew. Everyone meets a couple times a year and it's always a sh*tshow blast. We're all in our 20's and loving life. The Hubs and I are the only ones who are married but the heart of our crew, The Hub's roommate and my bridesmaid, are engaged and will be married in June 2013. We can't wait. I bet theyre wedding will be even more awesom than ours. Anyways, I didn't drink but The Hubs got pretty sauced and we ended up coming home around 8 p.m. Considering we left the house at 7 a.m. and got to their house at 12:30, it was a looonnnggg day. The Hub's bff from home came up and we all went out for pizza and drinks. They dropped me off and we went back out for the night. I spend the rest of the night with Lucy... considering she was home alone allllllll day I didn't want to leave her alone anymore. Poor girl, we came home and left like an hour later. It's okay, she's basking in my attention now. I do feel kinda guilty because our college bffs got a BRAND NEW PUPPY. Her name is Abby and she's TO DIE FOR. I want to wear her as a necklace and never take her off. Picture coming soon.

UNBELIEVABLY DELICIOUS FRENCH ONION SOUP!!!

Crockpot French Onion Soup
Serves 8-10 8 oz portions
Recipe adapted from How Sweet Eats
Ingredients
4 medium sweet onions, thinly sliced (about 6 cups worth)
3 garlic cloves, minced
4 tablespoons of butter
2 tablespoons balsamic vinegar
8 ounces of beer (any flavor)
64 ounces of beef stock (low sodium if you can find it)
1 tablespoon dried thyme
1/2 teaspoon black pepper
1/2 teaspoon salt (more or less depending on the beef stock you use)
No Knead Bread formed into loaves the shape of french bread (I left the rosemary out)
Mozzarella Cheese, sliced (shredded is fine too)
*The combination of mozzarella cheese, bread and thyme in the soup taste like pizza! It’s delicious!

Directions
Set your crock pot on high and add sliced onions, minced garlic, butter, salt and balsamic vinegar and mix. Cover and let cook for 60 minutes, stirring occasionally, until onions are a bit caramelized. Add the beer, beef stock, thyme, and pepper, then turn heat to low and cook for 6-8 hours. You can also do 3-4 hours on high.

*Soup can be made a day ahead of time, chilled and just reheated prior to serving. It can also be frozen (use ziplock or air tight containers) and thawed/reheated for a later use.
Before serving, cut the bread into 1 inch thick slices and put a piece of cheese on top of each piece of bread. You have 2 options for browning the cheese:

1. Fill each bowl almost to the top, then cover with a thick slice of bread and a slice of cheese. Set the entire bowl under the broiler for 2-3 minutes. This option is good if your broiler height is tall enough.

2. Place the bread/cheese on a cookie sheet and place under the broiler, then plop each little cheesy toast into your filled soup cup. This is the option I went with because my broiler is shallow (the kind on the bottom of the oven where most people store random cookie sheets). if you go with this option, you’re gonna want to make extra cheese toasts. They’re perfect to dip into your soup after you ever so politely scarf the toast on top of




Mine kind of looks like worms but I promise it's absolutely DELICIOUS. I think I made it like 3 times in 2 weeks. Oh.. it's SO good. I already have my meals planned for the week but I might just have to make this anyways. Oh and I don't put the toast on top because I do NOT like soggy bread. I just toast it in an oven with the mozzarella on top and dip it inot the soup :o) Here is the finished product:

Recipe! Aunt Ruthie's Super Delish Stovetop Popcorn!!

Hello!! Time for another recipe. I actually have a ton of recipes I have to share but I keep being lazy about it. Lately The Hubs and I have been discussing vehicles. The Hubs has a Ford Ranger truck... which i'm not sure if you're familiar with but it only has two center-facing seats in the back of the "cab" that I barely fit in... The Hubs loves trucks, his truck is his baby. First REAL car he's owned. We call it Black Betty. He has been VERY into researching trucks though, excited about getting a new one. He bounced between a truck, SUV, and a cheap sedan with no car payment. I had to set limits on price because he was getting a little buck-wild. WELL... on a whim we decided to go test-drive vehicles just for the fun of it... WELL... we came home with this!:





LOVE IT! So does The Hubs. It's a 2006 Jeep Grand Cherokee - but it's like LUXURY! Leather interior, power windows/locks/seats, wood grain center console, 6-CD player, HEATED SEATS! Oh that was awesome. Must have been super expensive when it first came out - we got an awesome deal. Payments are cheaper than his crappy truck! But we got an extended warranty so it ended up being more. We got rid of our netflix and gym memberships - since I don't go and The Hubs can workout at work... We're very happy with our new vehicle!

Yeah, gym. I went to quit, for budget reasons and i'm lazy and don't workout anymore. Turns out I owe money because my new card was entered wrong (I lost it after I went for a walk - turns out it was in my pocket - woops!). So until I paid that, I couldn't quit... but they said they would give me 3 free months to get back into the gym! Sweet. And if I decide to stay they will lower my payments by $5... but it would still be $19.99 a month and Planet Fitness is only $10 a month... so I might just be a sleeze and workout the free three months then transfer over to Planet Fitness. Or I might just quit cause Planet Fitness is closer and I could walk there - making me like 95% more like to go. Hmm... decisions...

Here is your AWESOME recipe!! We decided to make homemade popcorn and The Hubs busted out with this recipe his Aunt Ruthie used to make when he was little! IT WAS SO GOOD!!

This recipe made a TON of popcorn! We each had a BIG bowl and there was 1/2 a pot leftover... so you may need to scale it.

You Need:
3-4 tbsp Canola Oil
1 Cup Popcorn Kernels
1/2 stick butter (I KNOW - so bad! But SO good! You can use less if you want)
3 tbsp Honey
Salt

Take a COLD pan - ours was like 8.5/9 in  x 4.5/9 in.
Pour in oil, tilt the pan so it's covered to the COLD pan.
Pour in the seeds to the COLD pan, shake it so they're all covered and sitting in puddle of oil... like this:



Salt it - just a tad. Now, you turn the heat to MEDIUM, and shake shake shake the popcorn back and forth until the first kernel pops:


Now you QUICKLY place the cover back on and keep shake shake shaking back and forth until it all pops. It will happen pretty quickly. Take it off the burner once the popping slows down and comes to a stop, or the pot overflows... which is what mine did.


SAUCE!!

Pour your popcorn into your assigned bowls (we still had 1/2 a pot leftover - you will probably need more sauce for the leftover popcorn - or you could spread it throughout the whole lot it will probably still be good if it's evenly spread throughout the whole popcorn)
Melt the butter in a pot and mix in the honey.
Pour it on top!!

My Life via my iPhone

Well I finally got my iPhone pictures emailed to my phone. Here is what i've got. Most of them are of my furbabies and of food... but I saved the food ones so I can post the recipes with them. Here you go!

 Here is my new helmet! It's for The Hub's new motorcycle... can't decide if I like riding it or not..

These are the booties up-close. Don't make the bows with a 21 ch to start. I used 15 but I would have rather used 10.

 Awesome collar i've wanted to get her since she was a puppy. Very expensive for a collar so I wanted to wait until she was full grown. You can find them here.
